I would like to know what are "Hot Pinch Temperature" and "Cold Pinch Temperature" for Shell and tube Heat Exchanger, and what is the signficance of these parameters in designing of Shell and Tube Heat Exchanger. Attached is the snapshot of one Shell and Tube Heat Exchanger having Crude oil on Shell side and LP steam on Tube side for heating.

By definition in Aspen, hot pinch temperature is the hot stream temperature at the minimum approach. Similarly, cold pinch temperature is the cold stream temperature at the minimum approach. The easiest way to visualize this concept is to plot the T-H curves for both streams on the same chart.
