How To Calculate Humidity For A Condenser

Dear sir
I'm working For a pharmaceutical industry. I have faced a problem with Humidity during reaction in a reactor. We have 4kl reactor with 20m2 shell and tube stainless steel heat exchanger. During reaction in the reactor brine circulation (-5 to 0 degrees) was running to the condenser. And vent of the reactor was opened. Due to that some moisture condensed in the condenser and fall down into the reactor. Because of that reaction was not moved properly. My doubt is how to avoid that moisture without stopping brine circulation to the condenser and how to calculate the Humidity/ moisture rate in litre/hr.
