I read some document and I know that, we can use Deemulsifier to separate water in oil. But I don't know exactly about this compound: Properties, Safe in use......

can you please clarify what exactly you mean by "properties"?
safe in use...? design to appropriate code, compliance with PED (and ATEX) - I think that as a starting point it is a good idea to familiarise with these documents (EU directives if you write from Europe)

Google the topic, you'll find a lot of references: MSDS, standards, test methods, chemical vendors etc.
For more detailed information, visit the websites of NALCO, GE-BETZ, CHIMEC, and ask for additional information. They are willing to answer your queries, if these are related to practical subjects.

Note that deemulsifier is not a single compound. There are multiple compounds that can serve this function: to de-emulsify an emulsion...

Chemical vendors will provide you with all the required information, if you are a potential customer. I am not sure if they will do this just for the purpose of "academic query".
However, you can try to contact them (e-mail) and ask for this information. I remember receiving MSDS, test methods for various analyses, and proprietary software for monitoring the effects of different chemicals injected into the process stream(s) - demulsifiers, antifoulants, corrosion inhibitors, neutralizers etc.
