I have a question. If I want to cool a hot gas stream with particulate (like syngas) at T1 to a certain temperature (T2) by direct-contact with water, how do I count the amount of water I need?

Unless I'm missing something, a simple energy balance will do it. The energy contained by your entering dirty gas stream + the energy of water you spray into the gas will equal the energy of the wet, dirty gas leaving the contactor. Knowing the final energy, you can get the mix temperature. (I'm assuming good mixing and an all vapor outlet.)
