Do anyone of you know there I can find a list of typically fluid properties, so I can make an example of a heat transfer calculation, before I get the “real” data.
Something like the enzyme-mass which have to be used when making second generation bioethanol.

Although the reply of clarenceyue is fairly accurate and if you Google search with the properly selected words combination.You will get satisfying replies.
For the second part you seem to ask about minimum quantity of micro organism to initiate sustainable basis fermentation reaction, I assume!
Even for this you need to be clear about the particular 'Biomass' in question and the prevalent/ usual conditions& quantities for this fermentation.
Also any commercial aspects of feasibility or pilot scale work etc.
Hope this proves useful guidance.

What I am about to make is a general model of calculations, then it will be possible to change - for example - the height of the fermenter, the fluid inside it etc. to see what is required to remove all the heat.
Anyway, for this student project it will be enzymes for second generation bioethanol (I think the mass will be with tree types of Cellulases: Endoglukanaser EG, exoglukanaser (cellobiohydrolaser CBH) and β-glukosidaser βG.)) but it would be nice to see how the model is changing when it is for example insulin that have to be cooled down in the big agitated main fermenter.
The properties I need is:

It should be better if you use the specific phrase e.g 'antibiotics fermentation biomass properties'
This yielded around 29,000 plus hits quite a few might be useful/pertinent in your case.
