How can I calculate the density of the mixture of CO2, water and ethanol and later on how to calculate the density of CO2 in the mixture.
Data
I do know the mass of ethanol, water and CO2
I do know the total volumes as well.
Intially the alcohol content is 96%, and when it is mixed with the water it reduces to 40% before the mass of the CO2 is added.

In our software library, there's a two-phase flow spreadsheet calculation freely available:

Two Phase Flow

You can estimate the density of the liquid phase by using a weighted average of the densities of the alcohol and the water at the given temperature (I'm also assuming that the water and alcohol are in the liquid phase). Use these physical properties for the liquid phase in the spreadsheet.

You then see how the spreadsheet estimates the density of the two-phase flow. Now, you should realize that there are differing theories on how to do this and when it comes to two-phase flow, there's usually some art mixed in with the science.

As far as the density of the CO2, I don't see why any equation of state used to calculate the density of any other gas would not work just fine. Depending on the level of detail that you work entails, I usually recommend the use of the ideal gas law up to 5 times atmospheric pressure. When you get beyond that pressure, start using a more rigorous method.
