Anyone can simply calculate differential head using the density if we have provided the differential pressure. Then why do we specify differential head separately? It seems redundant.

It is redundant. The specification should be head for a centrifugal pump since this is the fundamental function of a centrifugal pump. Not so for a positive displacement pump, for which pressure differential is appropriate.
