Determining Plant Capacity

I am trying to determine the maximum capacity for a plant that processes meat products. I'm not quite sure how to go about determining this capacity. I have been analysing production reports and downtime reports thus far. What else do i need to do??

This is pretty vauge.
When you say "processes meat products" what are we talking about?
Is it a slaughter house? a rendering plant? a meat packing plant? a hot dog factory?

Depending on what kind of processing you mean, there could be all kinds of capacity issues.
Many of these issues could be much diferent than capacity of a chemical process plant.
But you may need to consider limits of mechanical equipment, labour requirements (for manual processes), storage (particularly if refrigeration is required) just as a starting point.

Please keep in mind that if you want any useful advise, you need to be more specific.
