The saponification reaction between ethyl acetate and NaOH is widely used in labs (college undergraduate labs) for studying kinetics in batch, semi batch and mixed flow reactors.

What is so special about this particular reaction that it is used for this purpose ?

Hi Breizh

I did try google. There is a lot of info regarding this reaction, but I want to know why this particular reaction is so widely studied ?

One point is obviously the safety involved in this reaction.
Another point that I could make out from the link that you have posted is that it is convenient at room temp to study this reaction . Using any other ester will require higher or lower temperature which means you have additional requirements to be taken care of.
 

Are there any more points?

As I recall from 37 years ago, the conversion of the reaction can be monitored using simple pH probe and meter.
