I did try google. There is a lot of info regarding this reaction, but I want to know why this particular reaction is so widely studied ?
One point is obviously the safety involved in this reaction.
Another point that I could make out from the link that you have posted is that it is convenient at room temp to study this reaction . Using any other ester will require higher or lower temperature which means you have additional requirements to be taken care of.
Are there any more points?
