Question: How does particle size affect the appearance of an oil emulsion in water?

Answer: For very large or macro molecules, to distinct phases will be present. For particles greater than 1 micron in size, the emulsion will appear milky white. Particles ranging from 0.10 to 1 micron will appear blue-white. Emulsions with particles ranging from 0.05 to 0.10 microns will take on a gray or even semi-transparent look. Particles less than 0.05 microns in diameter will produce a transparent microemulsion that can have three or more phases.
