Question: How do I find the heat of mixing between methanol and water?

Answer: To my knowledge, methanol and water don't really give off much heat when mixed. The parallel would be the extreme heat of mixing of sulfuric acid and water which is verywell documented. You could perform a bomb calorimetry experiment in which you measure the heat of mixing by measuring a temperature change. This would be my recommendation. You should be able to easily find the calculation method in any good chemistry book.
